Description

This is the best zucchini bread recipe. It’s moist, delicious, and easy to make.


Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 3/4 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 2 cups grated zucchini, excess moisture squeezed out
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour two 8×4 inch loaf pans.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat eggs, sugar, oil, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the zucchini and nuts (if using).
  6. Pour the batter into the prepared loaf pans.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

  • Squeeze excess moisture from zucchini after grating.
